Happy Blessed Birthday Linda

I am always happy to bake for friends and family for their special day. This one is no exception too. Linda, who has been my buddy for decades and I am happy to send her some love on her birthday with her favourite brownies.

 

As she WFH today, I met her for breakfast since it’s her big day, it’s always good to start celebrating from breakfast. Hahahaahah… she was so happy to see the brownies I made her for, and this time is a big one instead of the usual 12 pcs… haahahahahaha.

Black Truffle Scrambled Eggs

 A few days ago, I bought some fresh black truffles and made pasta with it. This time, I attempted to cook it with scrambled eggs for breakfast. Well, I would say this is one very expensive scrambled egg.

 

I cooked the scrambled eggs as usual but added some truffle oil to it and finished it up with shaved truffle. This is one delicious breakfast that you will want another serving… well, I did…

Black Truffles Fever

I chanced upon some good deals on black truffles from a friend and YES, I bought some fresh black truffles for the first time. Well, I have to say that it is some very expensive mushrooms indeed and we need to handle it with extra tender loving care.

The seller kindly delivered them to my house in the morning as soon as he received the mushrooms and got them packed. He told me that they arrived this morning from Italy and hurried to make delivery after packing. I got to say that the truffles smelt absolutely amazing when I opened the box, and I was told to put rice in the box with the mushrooms to keep them dry.


I was really excited about the whole process and quickly headed back to my kitchen and started to prepare ingredients for lunch as the kids would be home in 2 hours’ time. I was really torn between truffle pasta or truffle risotto… hahaahahah    


Finally, I decided to cook black truffle cream pasta instead. When the kids stepped into the house, they could smell the aroma of truffles in the house and they did not take too long to guess what’s for lunch… hahahahaahah… I shaved some extra truffles onto their plates and they said that it was so delicious that they want more servings… unfortunately, I cooked just enough for lunch. 😊 Let me think of what to do with the truffles tomorrow… ahhahaahahahhh

Stir-Fry Glass Noodles With Prawns

Oohhhh….. this is one of my favourite dishes! The very first time I tried it was at my ex-colleague’s house during Chinese New Year and she cooked this dish for us for luncheon. I totally fell in love with the glass noodles with the first spoon.

I learnt that this is one of the most popular dishes amongst the Hokkiens and infact, all the Hokkiens in Singapore knows how to cook this dish. They usually have this during special occasions and at times during home parties. I fell deeply in love with this dish, and she definitely made me looked forward to visiting her place during Chinese New Year… hahaahahahaha…


Well, given this Covid period, I took up the courage to try out this dish on my own. I checked out some of the recipes online and managed to find one that is the easiest to follow…. Hahaahahah… making this beautiful dish is pretty much easy and it only took me like 15 minutes to complete this dish. Though it wasn’t as tasty done by my ex-colleague, but it certainly tasted very good too.

I am very happy that the family enjoyed this one pot meal, and I am definitely keeping this recipe and will try it to perfect it. Covid period can be good as we are somehow forced to cook at home, and it has open a new world of cooking for me since. 😊

Brunch With The Kids

It’s Youth Day and kiddos are home. We brought them to one of their favourite cafes for brunch after a good 2 hours of cycling at the beautiful East Coast Park.

Love to cycle at East Coast Park as it brought back so many fond memories of my younger days. I remembered that I used to hang out with my buddy Susan at ECP on Saturday mornings for cycling and will head to lunch before returning home.


My family also enjoyed cycling at ECP as the cycling lanes are wider and made it more friendly to cycle with young kids. The view is also better than my usual Punggol Settlement as you get to see more people, cafes and activities while you cycle.


Anyway, we went to P.S. Café for our brunch and yes, we had a great time. The kids love their food though I thought it was rather pricey. Lady Faith’s favourite would be the cheeseburger, she said that it is super juicy and simply love the crispy fries that comes with it. Due to Covid, we were seated separately thus unable to order some food to share but I do hope that the situation will gets better so that we can dine together again as a complete family.
